Three great champagnes
I know it’s predictable, but for two years in Shanghai now I’ve resisted the urge to write the obligatory holiday champagne column. This year, I’ve given in. I’ve tried some serious bubbly these past few weeks and it just wouldn’t be in the spirit of giving to keep the experience to myself. Be sure you have a glass of at least one of these in your hand as the clock strikes twelve this year.
Brut, NV
Cattier
Cattier exhibits all the traits you should expect in a great brut: fine bubbles that seem to fizz on forever, appealing aromas of fresh-baked baguette, tart notes of tangerine, lemon and apple and a crisp acidic finish. Given the exorbitant taxes levied on all imported wines in this country, this one’s a steal.

Prestige Rose Brut, NV
Taittinger
As beautiful to behold as it is to drink, this rose is a lovely hue of salmon pink with bubbles flowing endlessly upward in tiny pearly strands. The nose is redolent of berries with subtle hints of cinnamon. On the palate it’s bright and fruity with flavors of fresh raspberries and notes of green apple on the finish.
Pair it with: The canapés you’ll be noshing at your posh New Year’s soiree.

Rose Sauvage, NV
Piper-Heidsieck
This one’s a beast. I never thought I’d describe a champagne as such, but there it is. It’s so dark and extracted that it’s nearly opaque. Bursting bubbles bring out aromas of sandalwood, cinnamon and cherries. The texture is velvety, voluptuous and surprisingly full-bodied. On the palate, it’s bone dry with complex notes of red fruits and spice. Truly unique among champagnes.
Pair it with: Take a risk, try it with chocolate.
