These days we associate it more with Singapore. It is, after all, their national dish. But make no mistake, they have China to thank for this delicious dish. When done right, a Wenchang chicken from Hainan Island is gently boiled in pork bone broth until the skin becomes clear and smooth. The result is meltingly tender meat. Then it’s served alongside rice, soy sauce, chili sauce and garlic and ginger puree. Here is where to get a taste...

Hainanese chicken rice in this authentic Cantonese restaurant is tender and tasty. Sucking the glossy golden chicken chunks off the bone smothered with their homemade soy sauce, you’ll probably end up eating three bowls of the rice just like we did!

We’ve never been impressed by this popular chain, but surprisingly their Hainanese chicken rice blew our minds this time. The chicken is tender and oozing with juice and we just couldn’t get enough of their garlic and scallion dressing!

You don’t get rice with this one, but the delicious chicken is all you need. The chicken is tender and drizzled in a slightly sweet sauce. The ginger and garlic dipping sauce is especially tasty; the ingredients are apparently the chef’s secret.
